Escobar's Mexican Restaurant in Kanab

(Kanab) - After a long day exploring the red rock country around Kanab, there’s a good chance you’ll notice a crowd forming outside a small Mexican restaurant on the edge of town. In a place this small, a crowd usually means only one thing;


The food is worth the wait.

That was certainly the case when Kylie and I stopped at Escobar’s Mexican Restaurant during a recent trip through southern Utah. The restaurant is just off the main drag through town. On the evening we visited the place was buzzing. People were gathered outside the door waiting for tables. But interestingly, nobody seemed bothered by the wait. Instead, folks were chatting, laughing, and swapping stories like old friends. That’s usually a pretty good sign.

Our wait ended up being about 20 to 25 minutes, which honestly wasn’t bad at all. One advantage of being a party of two is that you can often squeeze into smaller tables while larger groups wait for bigger spaces. While we waited, our adventure pup Aspen stayed in the car. Dogs aren’t allowed inside the restaurant, though there is a small patio area where they might be able to sit if space is available. The patio was packed when we arrived, so she stayed in the car while Kylie and I checked on her every 15 minutes. Don’t worry. She was eventually compensated with leftovers.

When we finally made it inside, we were greeted by Rosa Escobar, who seemed to be doing a little bit of everything. She was hosting, serving, chatting with customers, and somehow keeping the entire place running smoothly. Watching her move through the room was almost like watching choreography. She greeted people by name, joked with tables, and made sure everyone felt welcome, even on a busy night.

It’s the kind of atmosphere you only get in a family-run restaurant, and Escobar’s has been serving Kanab visitors and locals for years with recipes rooted in traditional Mexican cooking.

I ordered a ground beef burrito, while Kylie went with a salad. My burrito was simple and satisfying, exactly the kind of meal that feels right after a long day exploring southern Utah. Nothing fancy, just solid comfort food that hits the spot. The chips and salsa were very good and helped get you ready (or full) for the main meal.

The real magic here isn’t just the food, it’s the energy of the place. The packed dining room. The conversations between tables. Rosa moving through the crowd like a conductor keeping everything together. It feels like the kind of restaurant where locals come often and visitors quickly feel like regulars.

After a long day of hiking, exploring, or just road-tripping through southern Utah in places like White Pocket, Belly of the Dragon, or even the Stacked Cars, Escobar’s is the kind of place to fill up your belly in a fun, friendly atmosphere. And if you happen to have a hungry adventure dog waiting in the car? Just make sure you bring them a little something when you leave. Aspen certainly approved.
